Beautiful recipe. Is there no pectin necessary in the lime jelly? Is that contained in the apricot and lime enough? Thank you

Hi Francesca.
Thanks for asking! You're right that both apricot and lime are low-pectin fruits.
However, the jelly has a generous quantity of sugar, so that, coupled with the acidity of the lime, the solids in the apricot, and the cooking, is sufficient to produce the proper texture.
