Good question! It is not strictly necessary to remove the foam, and, in fact, the solids in the foam will get nice and brown once they sink to the bottom. However, removing the foam makes it a bit easier to see what's going on at the bottom of the pot. It also ensures that you won't have any un-browned solids stuck to the side of the pot. It's really up to you whether you want to skim them off.
