Preparation: Chocolate sablé Breton

  1. Mix the soft butter with the melted cocoa mass at 35 C
  2. Place it in the mixer with the paddle attachment and add the icing sugar
  3. Sift together flour + salt + baking powder and add into the mixer
  4. When the texture becomes sandy add the egg yolks
  5. Avoid over-mixing
  6. Finish manually and wrap tightly with plastic wrap.
  7. Refrigerate before using
