Ingredients: Midnight Shadow Bars

Preparation: Midnight Shadow Bars

  1. Use tempered Guayaquil to shell the bar mold.
  2. Pipe caramel filling on the bottom of the shelled mold.
  3. Pipe white ganache into the shell. Add in wafer before the filling sets.
  4. Add meringue and cap with Extra Bitter Guayaquil Dark chocolate.
  5. Allow to crystallize before unmolding.
  6. Enrobe the bar with Extra Bitter Guayaquil Dark chocolate, put on miniature white chocolate decoration.
  7. Splash some red colour cocoa butter on top.
