Preparation: White Chocolate Ganache

  1. Mix 35% cream, sorbitol, isomalt & maltitol together and heat until all ingredients are dissolved.
  2. Melt white chocolate at 35°C and add the warm cream.
  3. Add butter at room temperature. Emulsify using an immersion blender

Preparation: Shell and Inclusions

  1. Use tempered 811 to shell bonbon molds. Allow to crystallize.
  2. Mix cocoa nibs and cookie crumbs into White Chocolate Ganache.
  3. Fill molds with ganache.
  4. Cap with tempered 811. Allow to crystallize. Unmold.
