We are thrilled to welcome the internationally renowned pastry chef and Chocolatier Lawrence Bobo to our academy!
Lawrence has forged a great name for himself in the area of chocolate showpieces. His unique style sees Lawrence create fantastic show pieces with minimal use of moulds and equipment making this accessible to all. His unique style breaks away from the traditional showpiece and allows you the freedom to be creative when designing your own bespoke showpieces.
Course agenda
Lawrence’s chocolate showpiece master class will teach you a whole host of skills and techniques from scratch including:
- How to design and balance a completion show piece
- Casting the structural base elements of the show piece
- Sculpting and modelling chocolate
- Explanation of how chocolate and cocoa butters work in different environments and application
- Spraying IBC cocoa butter colours to create different effects
- Polishing and finishing the different elements of the show piece to achieve a completion standard.
- Most importantly after spending all those hours creating the show piece, he will show you how you transport it to the competition or to a customer.
