- Cook the sugar and water to 115 Celsius.
- Add the nibs and mix well until you get a sandy texture.
- Add the Fleur de sel and reserve.
- Temper the chocolate.
- Add the cocoa nibs directly into the molds then pour on top the chocolate and let crystalize.
