Come along as former Le Bernardin pastry chef, Michael Laiskonis invites you to join him on a journey of plated desserts during this masterclass:

For pastry chefs, the most challenging and rewarding form of expression is the plated dessert. The plate as a blank canvas becomes a medium upon which we layer flavors, textures, and temperatures. Within this unique form of architecture, we employ seasonal ingredients, technique, science, and inspiration drawn from both tradition and innovation. In this class, students will explore a cohesive ‘tasting menu’ progression – from pre-desserts to plated desserts to mignardises, with an emphasis on flavor pairing, recipe formulation, and ingredient composition.
