- Local Ingredients
- Small Splurges
- Honey and Seeds
Emotional Wellness
According to Innova Market Insights’ “Global Flavor Trends 2025” report (January 8, 2025), customers “look for various paths to mental and emotional wellness, including flavor experiences, that can be uplifting or calming.” They note that “manufacturers offer flavor choices to meet consumers’ emotional needs.”
Flavors can help customers feel cheerful or calm; they can perk them up during a long day or help them unwind in the evening.
Look to flavors like citrus and coffee to brighten your customers’ moods.
Mood-Boosting Flavors!
New Flavors and Experiences
According to Datassential’s 2025 Trends Preview Report, 71% of consumers are excited about new food and beverage trends in 2025.
2024 has introduced some incredible viral trends such as the Dubai Bar, the New York Cookie, and croissant cubes - all fun, indulgent ways to enjoy one of our favorite ingredients - chocolate! These trendy items continue to draw customers who don't want to miss out on the latest dessert craze. You can ease into 2025 by creating your own version of these must-have sensations, or jump in with both feet and create your own trend.
Take a look at RB2, Callebaut's intensified version of the 4th chocolate and get inspired to create your next best seller. Or explore Cacao Barry's newly launched Matsiro. This chocolate stands out for its intense cocoa profile, with vibrant notes of raspberry and cherry emerging in the first bite.

Local Ingredients
Mintel’s 2025 Global Food and Drink Trends notes, “As disruptions to the food supply become more frequent, the industry will need to encourage consumers to accept and trust the new origins, ingredients and flavors that will emerge locally and globally.” Using local produce and products not only keeps your sourcing footprint small, it shows your customers that you support your community.
Our Chocolate Academy™ Chefs in Montreal love to feature local ingredients in their recipes. Let their creations inspire your own community-centric desserts and treats!
Desserts with Local Flair
Small Splurges Instead of Large Expenditures
According to 2025 trend predictions from Food & Wine, “grocery items are getting fancy to recreate the special experience of dining out while just raiding your pantry.”
Everyone is looking for a little treat that’s not a big splurge (see also: the “lipstick effect”), so give your guests what they came for: all-out indulgence! Think: multiple textures and layers of flavor.
Truly Indulgent Little Treats
Honey and Seeds
Food & Wine had another prediction that spoke to us: Honey and seeds. While F&W cites Cottagecore as the inspiration for this trend, we see a search for healthy indulgence at the heart of it. Customers are looking to avoid refined sugar and seeking ways to put a healthy spin on their favorite treats with additions like nutritious nuts and seeds.
