Cinnamon Ganache
Ingredients: Cinnamon Ganache

14.1 ozcream 35%

3.5 ozinvert sugar

0.1 ozVanilla

15.4 grclove

0.7 ozsorbitol

0.7 ozcinnamon powder
Preparation: Cinnamon Ganache
- Boil the cream, sugars ,vanilla and clove together.
- Strain and poor on the Lactée Superieure chocolate and mix well.
- Add the cinnanmon powder and mix well.
- Crystallize at 32C.
- Poor crystalized Alunga milk chocolate on the marble table and spread until thin layer
- Spread the cinnamon ganache on top.
- Roll directly on the marble using a scraper (same as making chocolate cigarets)
- Spray a mix of 50% dark chocolate and 50% of cocoa butter and cover with some Plein Arome cocoa powder using a brush.
