W2 Mousse

Ingredients: W2 Mousse

Preparation: W2 Mousse

  1. Bring milk, cream, and vanilla to a boil.
  2. Hydrate the gelatin and add it to the hot milk mixture.
  3. Pour this over the chocolate and mix until emulsified.
  4. Allow the mixture to cool.
  5. Whip the cream to soft peaks and fold it into the chocolate mixture.
  6. Mold the mixture and set it in Mona Lisa chocolate domes.

Cranberry Gel

Ingredients: Cranberry Gel

  • 300 g
    Cranberry juice
  • 40 g
    sugar
  • 4 g
    agar agar

Preparation: Cranberry Gel

  1. Bring juice and sugar to a boil.
  2. Off the heat, add agar while stirring.
  3. Cook for 1 minute.
  4. Let it set until firm, then blend until smooth.
  5. Pour into the desired mold.
  6. Once frozen, add it to the center of the W2 mousse.
