Chocolate Ice Cream
Ingredients: Chocolate Ice Cream

140 ggranulated sugar

Preparation: Chocolate Ice Cream
- Pour the cream and milk into a pot and whisk in 100g / 3.5oz of sugar, cocoa powder, and salt. Stir until sugar and salt have dissolved. Warm until steam comes through
- Whisk together the yolks and the remaining sugar until uniform.
- Temper the dairy mixture. Combine the egg yolk mixture with the dairy mixture.
- Cook to nappe or 84°C (183°F)
- Pour over St. Domingue. Let sit until melted
- Immersion blend until smooth
- Strain into a bowl and cool in an ice bath
- Transfer to paco jet canister and freeze overnight
- Spin right before making the milkshake

Fudge Swirl
Ingredients: Fudge Swirl

60 gbrown sugar

200 gGlucose syrop

15 gbutter

5 gvanilla extract

2 gsalt
Preparation: Fudge Swirl
- Combine the heavy cream with the brown sugar, bring to a boil
- Whisk in the cocoa powder until dissolved. Bring to a boil once more
- Pour mixture over the glucose syrup and chocolate
- Immersion blend to emulsify
- Add in the butter, vanilla extract, and salt
- Immersion blend once more
- Strain
- Cool and store in piping bag in the refrigerator

Preparation: Chocolate Milkshake
- Create a swirl throughout the glass using the fudge swirl in a piping bag.
- Place half of the paco jet contents of chocolate ice cream into a blender
- Blend with milk until desired consistency.
- Pour the milkshake into a milkshake glass and top it with whipped cream
- Place shavings around the whipped cream and top with a maraschino cherry
