
Chef Graham is the co-founder of Longboys, a U.K. shop featuring long “finger doughnuts” with chef-inspired fillings along with innovative sundaes and coffee beverages. He and his partner also offer pastry consultancy services.
As the former Head Pastry Chef at the Mandarin Oriental, Hyde Park in London, he was responsible for all pastry preparation of the hotel. In his role as Executive Pastry Chef for the Hakkasan group, Graham oversaw the pastry kitchens of the group’s worldwide portfolio. He has won numerous awards for his creations, including U.K. Pastry Chef of the Year 2007 and was twice awarded Tea Guild Best Afternoon Tea (2005, 2008).
Graham has served as a judge for The Royal Academy of Culinary Arts and The U.K. Pastry Club coupe du monde, among others.
