Gold Praline Layer
Ingredients: Gold Praline Layer

2.8 ozchopped apricots

2.8 ozchopped pecans
Preparation: Gold Praline Layer
Mix the tempered gold chocolate with the praline
Stir through the apricots and pecans
Pour into a 25cm x 25cm frame
Smooth and set in a 12c fridge for 3-4 hours
Dark Praline Layer
Ingredients: Dark Praline Layer

1.4 ozchopped apricots

2.8 ozchopped pecans

1.4 ozdried cranberries
Preparation: Dark Praline Layer
Mix the tempered 811 dark chocolate with the praline
Stir through the chopped apricots, pecans and cranberries
Pour into a 25cm x 25cm frame
Smooth and set in a 12c fridge for 3-4 hours
Assembly
Cut the praline layers into strips 1.5cm wide
Cut the strips into descending lengths
Start layering the praline strips one on top of the other, longest at the bottom. Alternate between dark and gold on each layer.
Use a small amount of chocolate, in the very centre, to stick the layers together
Turn each new layer by 5-10 degrees so that the tree swirls as it goes up.
If you don't want to layer to create your Christmas tree, you could package them.
