Chocolate Lava Cake

Preparation: Chocolate Lava Cake

  1. Melt the butter and the chocolate at 40°C.
  2. Mix the eggs with the sugar and add to the melted chocolate mixture.
  3. Add the cream.
  4. Sieve the flour and incorporate it into the batter.

Preparation: Assembly

  1. In a ring of 8 cm diameter and 6cm height, pipe 50g of the Lava Cake batter.
  2. Add the 20g of the Callebaut | Cremas.
  3. Cover with the 30g of Lava Cake batter.
  4. Bake at 200°C for 8 to 9 minutes.
  5. For a better result freeze the Cremas and put it into the chocolate fondant frozen and bake it.
  6. For the finishing, you can put a disque of Chocolate on top to remind the insert.
