Chef Paulo began his pastry career in the vibrant culinary scene of Manila, working in prestigious hotels and restaurants. His passion for pastry arts led him to Bangkok, Thailand, where he joined forces with renowned pastry chef Eric Perez at his Pastry School. Initially responsible for production in the pastry shops and assisting in classes, Pauolo quickly proved his expertise and was entrusted with the role of pastry instructor, leading in-house classes and collaborating with numerous leading pastry chefs in master classes.

After four years of honing his craft at the pastry school, Paulo embraced a new challenge as the pastry chef for a Thai start-up focused on manufacturing pastries and bread for both local and international coffee chains. His entrepreneurial spirit shone through when he encouraged the company’s owner to open Seen Bangkok, a pastry shop dedicated to French pastries and viennoiseries. Under Paulo’s guidance, Seen flourished, and after five successful years, it evolved into Scene, relocating to a new site, adding a brasserie, and expanding its dessert offerings.

With a wealth of experience and a commitment to excellence, Paulo continues to innovate in the world of pastry, blending traditional techniques with contemporary flair.
