Ingredients: White Chocolate & Vanilla Ganache

  • 0.7 oz
  • 4.2 oz
    cream
  • 1.0 oz
    Glucose powder
  • 0.9 oz
    dextrose
  • 0.2 oz
    invert sugar
  • 0.9 oz
    butter

Preparation: White Chocolate & Vanilla Ganache

  1. Heat the cream, then add the sugars and heat to 40°C.
  2. Create an emulsion with the chocolate and add the butter last.
  3. Pipe the mixture at 27°C.
