Preparation: Filling Sesame
Molding:
- Spray dots with tempered black chocolate
- Spray followed by white chocolate spray
- Spray gold color
- Create shells with Gold Quintin
Filling:
- Melt CARMA Gold Quintin 31%.
- Add the praline, sesame paste and the roasted sesame.
- Temper.

For the filling recipe:
- Make a dry caramel with sugar and sorbitol.
