Raspberry Marmalade

    raspberry purée or berries

Preparation: Raspberry Marmalade

Heat to 40°C.

  • 1.8 oz
    sugar
  • 0.1 oz
    NH pectin

Preparation: Raspberry Marmalade

Add the sugar and pectin and heat up to 103°.

Pour the marmalade onto a flat tray.
Cool it overnight and then it’s ready to use.

811 Chocolate Crémeux

    Cream
  • 1.0 lb
    whole milk
  • 4.9 oz
    egg yolks
  • 1.8 oz
    sugar

Make a Créme Anglaise.

Preparation: 811 Chocolate Crémeux

Pour the Créme Anglaise over the chocolate, and use a stick blender to make an emulsion.

Pour the crémeux into a flat tray and cover with plastic wrap. Let it crystalize overnight before use.
