Good question, Andrea.
The shelf life of your mendiant will be determined by the shelf life of the ingredients you choose to use: dried fruit, nuts, Crispearls, etc., and the "use by" date on these items should be your guideline. For example, a fresh container of dried cherries may be good to use for 2 months, but if it's been open for a month already or it sat in a warehouse for a while before it got to you, the remaining shelf life will be less than 2 months.
The base of your mendiant is simply crystallized chocolate which, on its own, has a very long shelf life if stored correctly. The tempering process can introduce some impurities, and, of course, the fruit, nuts, etc., contain sugars and oils that may affect the chocolate.
This is all to say that Chef Philippe's estimated shelf life of 6 weeks is a good base. Be sure to package your mendiants properly and store them at the recommended temperature and humidity level.
